We are Sydney-based coffee roasters with a real passion for the craft of coffee roasting. We're boutique roasters, so we're really fussy when it comes to profiling, roasting and blending.

We want our passion and attention-to-detail to be obvious the moment you savour a fresh cup of our coffee. We may be boutique, but we want our coffee to be affordable.

So we've worked hard to develop a great network of supplier partners who are as passionate as we are, and then we only roast small batches – on demand.





We're always drinking coffee: it's not just about the intoxicating aroma, those complex lingering flavours and that rich, velvety mouthfeel. There's also the warm and cosy aura of sharing the ritual of coffee drinking with friends: the laughter, meaning and intimacy.

The more we savoured those moments however, the more intrigued we became. Mere curiosity quickly bloomed into a burning passion. We drank at hundreds of cafes, scribbling detailed notes with each sip. Then, we retreated to our roasting lab (AKA 'The Den') and spent countless months learning about the challenges of harnessing the character of each bean.

Finally, we funneled what we'd learned into delicious tasting experiments that taught us the science behind consistent, quality roasting. Of course, we still love drinking coffee and sharing the experience with our friends. But now we've fallen in love with every stage of the journey: from the hillside to the cup.

The art of roasting is a complex yet rewarding process – it’s a journey in which we’re constantly learning and evolving. The variety, origin and desired flavor characteristics are just some factors used to determine the optimum roast profile. As a result, each bean requires specific roasting times and temperatures to unlock their amazing and unique flavour compounds. And day-to-day variations in air temperature and humidity mean that every single batch must be roasted slightly differently.

Final blending of the different beans demands careful adjustment to produce a perfect balance of flavours and textures. Immediately after roasting, all beans are packed into one-way valve bags, allowing for degassing to take place. The result is coffee that can be enjoyed at its peak freshness by the time it gets to you.

Delivering a product we're rightly proud of requires plenty of effort and dedication. But we're happy to do it because our philosophy is all about passion, not just production.
